Vineyards:
Small-berried Macabeo vines, bush-trained and dry-farmed on clay soils.
Harvest:
Hand-picked during the first days of October, selecting clusters at their optimum ripeness.
Vinification & Ageing:
After destemming and crushing, the grapes macerate for 10–12 hours at 11 °C to maximise aromatic extraction. The free-run must is drawn off and ferments with native yeasts for 4–5 weeks at 12–16 °C. The wine then rests 100 days on its lees in tank, with periodic bâtonnage that adds volume and creaminess.
Tasting Note:
Bright yellow with greenish hues. Intensely aromatic—ripe white fruit, banana, and melon, layered with herbal complexity. Powerful on the palate: broad, oily, and long-lasting, with stone-fruit flavours and vibrant acidity. Structured, bold, and persistent.
Serving Suggestions:
Serve at 8–12 °C. Perfect with rice dishes, seafood, appetisers, or even a fine plate of cured ham.
